* If possible, state your previous job in a positive manner. This shows that you are the same level as the position you are applying for.
* Show what you bring to the kitchen; what new innovations and ideas do you have. What were the results?.
* Show you can learn the menu currently in place. They want to know you can handle the orders.

The third paragraph:

* Close with a good sell of yourself. Show that you would love the job if offered.
* Express an honest desire to meet with the person doing the hiring.

* Show that you really want to be part of their business..
* Show you have a brain; give an impression of intelligence without sounding flowery.
* Show the ability to successfully make the position yours.
